Emu Bar-B-Q

1# ground emu
1 tsp prepared Mustard
3 Tblsp Canola Oil
1 tsp Worcestershire Sauce
2 tsp Brown Sugar
2 tsp Lemon Juice
3/4 c. Ketchup

In small mixing bowl combine brown sugar & lemon juice. Add mustard & Worcestershire sauce. When well blended, mix in ketchup. Brown ground meat in canola oil. When browned, lower heat. Add all ingredients to browned meat. Heat thoroughly.

Emu Meat Loaf

1# ground emu
1 sm. onion (chopped)
1/4 tsp. Adolph's - Tenderizer w/ spices
1 egg
1/2 c. applesauce or any grated fruit or veg.
3 slices bread (cubed)
3 Tblsp. water
1/2 tsp. Sea Salt
1/2 c. chopped mushrooms
Pam

GLAZE
1 Tblsp Honey
3 Tblsp Ketchup

Soak bread crumbs in water for 3 minutes. Mix all ingredients except glaze in large bowl. Mix well. Spray loaf pan with Pam. Pat mixture firmly into loaf pan. Bake in 375deg oven for 1 hour. Mix honey and ketchup. Place glaze on top of meatloaf. Continue cooking for 10 more minutes.

Emu Chili

1# ground emu
3 Tblsp Chili Powder
1/4 cup Canola Oil
1 tsp. Brown Sugar
1 c. chopped Onions
3 1/2 c. whole tomatoes
3/4 tsp. minced Garlic
1 c. Tomato Sauce
1 c. Gr. Pepper strips
1 c. water
1/2 tsp. Sea Salt
2 c. Baked Beans

Brown emu in oil. Add chopped onions, minced garlic and green pepper cut into strips. Cook 5 minutes, stirring constantly. Add chili powder, sugar, whole or stewed tomatoes, tomato sauce, water and salt. Simmer 1 1/2 hours. Add baked beans. Heat thoroughly before serving. Serves 6-8

Oven Cooked Emu Steaks

1# fan fillet Italian Salad Dressing

Tenderize meat with a steak hammer. Place Italian Dressing on a large piece of aluminum foil or in a plastic oven bag (enough to thinly cover the bottom). Place tenderized emu steak on top of Italian Dressing. Place a thin covering of Italian Dressing over meat. Seal foil or bag and place in an open ovenproof pan.

Bake at 225 degrees for 2 to 3 hours. Slice diagonally across the grain of meat. Pour juice on top of meat. Serve over mashed potatoes, noodles or rice. Makes excellent emu steak sandwiches.

Emu Country Sausage

For a nearly fat free sausage try this recipe. The finished sausage can be refrigerated and formed into patties and frozen for later use.

2 Egg Whites
1 tsp. oregano
3/4 c. bread crumbs
1 tsp. Sea Salt
1/2 c. minced Gr. Onions
1/2 tsp. pepper
3/4 tsp. minced Garlic
1# ground emu
1 Tblsp dry Mustard
1/2 c. applesauce
2 tsp. dry Sage
Oil for frying

In a large bowl, lightly beat egg whites with a fork. Add bread crumbs, onion, garlic, dry mustard, sage, oregano, salt and pepper. Mix well. With hands work in ground meat and applesauce (or grated apple) until well mixed. Refrigerate. Form into patties (about 24 patties). Cook meat in a non-stick skillet brushed with oil. Cook until browned - about 2 to 3 minutes per side over medium heat.

Emu Neck Vegetable Soup

6 qts. water
1/3 Rutabaga (cubed)
6 neck sections
1 sm. Turnip (cubed)
2 shakes Mrs. Dash (original)
1/2 cup frozen Peas
1/2 bag x-fine Noodles
1 1/2 tsp. Sea Salt
1/2 tsp. minced Garlic
3 lrg. Carrots
1/2 Onion (minced)
1 Parsnip (cubed)
1 Tomato (peeled & diced)

Simmer neck bones in water with seasonings for 4 hrs. Strain broth and remove meat from bones when cooled. Return broth and meat to cooking pot. Add vegetables. Simmer 1/2 hr. Add noodles. Simmer additional 1/2 hr.

Emu Meat Spaghetti Sauce

Slowly brown 1# ground emu in 3 Tblsp. canola oil. Add your favorite spaghetti sauce to browned meat. Heat thoroughly.

Emu Patties

Grill or pan fry over med/high heat. When meat juices cover the surface, flip over. When meat juices seep to the surface, flip again. Remove from heat after 1 more minute. Serve on hamburger bun with mustard, ketchup, pickles or relish, onions and tomato.
